Chili – Sue Hanley

 l     pound ground sirloin or round

1     cup chopped celery

1     cup chopped green pepper

˝    cup chopped yellow onion

1     teaspoon garlic, minced

1     6 oz. can tomato paste

1     46 oz. can V-8 juice

2     15 oz. cans diced tomatoes

2     tablespoons chili powder

1     tablespoon honey           

1     teaspoon basil

˝    teaspoon  thyme

˝    teaspoon salt

˝    teaspoon pepper

2     15- ounce cans chili-style beans

 

 In a skillet, sauté celery, pepper, onion, and garlic with ground beef.  Drain excess grease.  Transfer to a large soup pot and add V-8 juice, tomato paste, diced tomatoes and seasoning.  Cook on medium heat for at least 30 minutes.  Add beans and continue to cook for another 15 minutes.  Turn off heat, put on lid and let set a few minutes before serving.  Garnish with cheddar cheese. 

Yield:  8 servings.
