Banana Bread – Mary Price

1 ½  cups flour

½     cup sugar

¼     cup honey

2      teaspoon baking powder

½     teaspoon baking soda

¼     teaspoon salt

2      medium-size bananas   

1      stick butter or margarine, softened

2      tablespoons milk

2      large eggs

1      cup chopped pecans

 

Preheat oven to 350-degrees.  In   large mixing bowl, combine 1 cup of the flour, sugar, baking powder, baking soda, and salt.  Add mashed bananas, butter, honey, and milk and mix.  Add eggs and remaining flour and stir until blended.  Stir in nuts.  Pour batter into a greased 8 x 4 x 2- inch loaf pan.  Bake for 55 to 60 minutes of until a toothpick inserted in the center comes out clean.  Cool for 10 minutes on a wire rack.  Remove from the pan, cool, wrap and store overnight before slicing. 

Yield:  1 loaf, 8 mini-loaves, 12 muffins, and/or 24 mini-muffins.
